After many attempts to find a healthy, delicious dessert, I finally found this recipe from EATING BIRD FOOD, an awesome website packed full of delicious recipes. I did however, substitute maple syrup for Coconut Brown Sugar, and made a Monk Fruit Cream Cheese Icing, with chopped Maraschino Cherries on top. The results are out of this world! ❤️

INGREDIENTS: What you will need 1. 1 Medium head of Cauliflower 2. Olive Oil Cooking Spray/Olive Oil 3. 1 Bag of Italian Blend Cheese (Shredded) 4. Salt and Pepper 5. 2 eggs 6. Toppings for the Delicious Personal Pizza 7. Garlic powder or 1 Garlic Clove chopped fine. Pulse the Cauliflower in a Food Processor until made fine and/or resembles rice.
Remove crust from oven and place favorite toppings. Tip No. #3 Always make sure your toppings are already prepared/cooked before placing them on the pizza. Place back in oven for about 5 minutes. Take out of oven, let it rest. Now it's time to get your Yum on! The best part about this recipe is the many additions or tweaks anyone can use. Everyone has their own personal twist and style; making this dish a one-of-a-kind masterpiece! Tip No. #4 Keep in mind when using any recipe. This amazing Pinterest Pin Recipe "Cranberry Pistachio White Chocolate Truffles" caught my eye. Since being on a strict gluten free, sugar free, low carb-calorie diet, It's hard to find delicious yet simple mouth salivating desserts. They turned out DELICIOUS! First in a small saucepan over low-medium heat melt butter, add heavy cream and stir to combine. Then stir in Salt. Add Orange or Vanilla Extract (Optional) Set aside.
Over a double broiler melt finely chopped white chocolate, stirring casually until smooth and completely melted. But DO NOT over heat the chocolate!!! Do not heat above 105 F or the chocolate with separate and be unusable. Remove from heat and using a rubber spatula gently stir in lukewarm mixture of butter and heavy cream into melted chocolate. NOTES!!! Butter and heavy cream mixture should be approximately the same temperature as melted chocolate when you combine them. Stir in fruit and nuts and let it sit and room temperature for an hour, cover with a plastic wrap pressed on the top of the mixture so a film does not form . Then refrigerate for 2-3 hours (Until firm). Roll the mixture into balls and dip them in the Powdered Sugar. Store in refrigerator up to one week or freezer for longer storage. I would love to make these again in the future, this time experimenting with more fruits and flavors.

Okay first things, first. This amazing recipe is on PINTEREST. This morning, Christmas Eve, I tried this pin "Sweet Potato Goat Cheese". I did however change one ingredient. It called for Pecans, and I used Sliced Almonds instead. Looking for a healthy go-to snack? This is it! This would be great as an appetizer, for dinner guests, or even just for yourself. APPLAUSE!!!
